Thailand Rainbow Mango, also known as Mahachanok or Maha Chinook, is a hybrid mango variety originating in Thailand. It's a cross between the Thai Nang Klang Wan and the Sunset mango cultivars. The name "Rainbow Mango" comes from its beautiful multi-colored skin, which displays patches of green, yellow, and red when ripe. Rainbow mangoes are unlike any other—they're oblong and elongated with a slight curve at one end, and their skin is smooth and thin. These mangoes are not only beautiful to look at, but they're also deliciously sweet and fragrant. They are delicious eaten raw as a snack and can be used in various dishes. They are great in fruit salads and as a topping for desserts like ice cream and the popular Thai mango sticky rice. They can also be dried, made into fruit rolls, or used in cooked dishes like curries, chicken, and vegetable stir-fries.
