Yellow pitahaya is native to northern South America, particularly countries like Colombia, Ecuador, and Peru, as well as Central American nations such as Mexico, Costa Rica, and El Salvador. While less common than red varieties, its commercial production has been increasing due to its desirable flavor. It's often available year-round due to varying peak seasons in different growing regions worldwide. 

Unlike its more common red-skinned counterparts, the yellow pitahaya has a bright, vibrant yellow skin. When young, it may have small, knobby protrusions that used to hold spines, but these naturally fall off as the fruit ripens. The flesh inside is typically white or translucent, speckled with slightly larger black seeds compared to red varieties. Yellow pitahaya is widely considered the sweetest and most flavorful of all dragon fruit varieties. Its taste is often described as mild, sweet, and floral, with subtle notes of tropical fruit and sometimes a slight tang. The texture is juicy and can be compared to a mix between a kiwi and a pear, with the tiny black seeds adding a pleasant crunch.
